Pour over the eggs and the softened butter and beat the mixture together. Add the milk a little at a time, stirring with a wooden spoon; this will help prevent a lumpy batter. The batter should be the consistency of double cream when mixed. Melt a knob of butter in a non-stick frying pan and, using a ladle, pour in a dollop of batter mix. Fry over a moderate heat until bubbles appear, then flip and cook the other side for a couple of minutes. Serve with maple syrup or a squeeze of lemon.
